|Prawn, Melon and Mango Salad
340g (12oz) large cooked,
Peeled prawns, fresh or defrosted
1 x 240g pack prepared melon cubes, drained
1 mango, peeled and diced
Rind and juice of one lime
5 x 15ml spoon (5 tablespoons) mayonnaise
|Salt and pepper
Fresh chopped mint, to garnish
Place all the ingredients into a bowl and mix.
Garnish with the mint and serve with crusty French bread.
